FAQs

How do I book a party?
Once you have approved your party proposal, we prefer if you mail us a 50% check. You can also mail your signed & initialed contract or you can sign & initial the contract online. To pay with a credit card we typically email a separate Paypal invoice which allows you to enter your info into their secure web site. Please contact us for further details.

 

How far in advance do I have to book?
We book on a first come, first serve basis and cannot guarantee availability. For peak periods (summer) we encourage you to book as far in advance as possible.

 

How much is it if I have less than 50 people?
We charge for 50 people or less, so the price for 30 people is the same as 50.

 

What is your minimum number of people?
We have no minimum number, but the charge for 50 people will apply.

 

When do you need to know our final count?
We look for your final head count and menu two weeks before your party.

 

Do I have to pay full price for children?
We calculate ½ pizza per adult guest. We suggest you look at the ages of the children and give us an adult equivalent. For example, if you have 8 small children and you think they will eat 1 slice each then add 2 to you guest count.

 

Can you come earlier than it says on the calendar?
This is entirely dependent on the circumstances. Please call us well in advance to arrange.

 

Do you do parties outside of Connecticut?
We serve events throughout Connecticut, parts of Massachusetts, and New York.

 

What happens if it rains?
BIG RIG: This is a self-contained kitchen, with 3 refrigerators, gelato freezer, and four sinks it opens up so you see all the action, and closes down to ensure continued food production if the weather turns bad:
NEW RIG: An 48″ Italian oven with a 20 x 10 commercial canopy kitchen built alongside of it, with rain walls as needed.

 

Rain Dates?
We cannot set predetermined rain dates. If a party is canceled we will do our best to work with you to set a new date.

 

Can you bring pizzas to the buffet?
We ask clients to provide a “food runner” to bring pizzas from the oven to the buffet, especially if the buffet is in a remote location. Extra service people often are most economically handled locally to the party. We can also provide a food runner for an extra charge.

 

Can you pull up to my garage?
We can pull up close to a building or garage, but we cannot pull inside a building because of our chimney

 

Parking and Set up

Can you park in the backyard?
If the ground is level and firm enough, yes. If you have septic systems or in ground  sprinkler systems, we are not responsible for damage.

Can you park on the street in front of my house?
We can park in the street, as long as the road is reasonably level and there is room for our tables.

 

Menu

Do you have gluten free pizzas?
Yes, please make sure to request gluten free dough for your event. Our gluten free doughs come from Venice Bakery.

Do you take requests for pizzas?
Yes, however we PLEASE ask you make the request after a party’s initial rush has been taken care of.

Vegetarian, and Vegan Cuisine options?
We can easily meet all of your dietary concerns. Here’s a blog post of pictures from some vegetarian weddings.
We offer many vegetarian/vegan pizza toppings combinations. In addition we have many entree offerings which can be done as buffet platters or live chef stations. These include pasta sautes, Paella, Asian Grilled Tofu, organic roasted vegetable, salads, fresh fruit, crudités, pilafs, roasted & steamed potatoes. Of course, these menus tend to be driven, not only by the client’s tastes, but also by what is generally in season, organically and/or locally, at the time of your party.
Vegan or Vegetarian antipasto appetizer spreads can include some, or all of the following: fruit platter, wood roasted organic veggies, fresh basil pesto and chipotle aiolis, crudités, crostini & crackers w/local heirloom tomato bruschetta, olive medley, caprese salad, hummus, baba ganoush, cannelini spread, and olive oil dip. Vegan antipasto is similar to the vegetarian, but we remove the basil & chipotle aiolis which are mayonnaise based and any cheese.
Just ask and we will attach menus for these to your initial proposal.

Common Allergens?
Tree nuts, peanuts/peanut oil, cheese, no problem, we do not add any dairy, nuts or common allergens to our sauces, dressings, etc. If you choose any of our commercially prepared items, like gelato or hors d’oeuvres, we can’t guarantee that some of the ingredients used weren’t processed in a facility where nuts or dairy are also processed. However, we can go through your menu selections one by one, and get all ingredients from manufacturers as needed.

Kosher?
We are not a Kosher kitchen. We can separate dairy and meat items on different ends of a buffet table, or separate them on different table If you would like no pork or shellfish, no problem, we have so many other offerings.

How many trucks do you have?
Currently, we have 2 trucks in operation.

What are the truck dimensions?
Rig 1 – 45’ x 13’
Rig 2 – 35’ x 18’


Other Questions

What type of paper plates do you use?
We use “chinet” style white plates. We will use yours if you would prefer an alternative.

Do you have a restaurant?
We have a pizzeria at 12 PT Barnum Square, Bethel CT. If you would like a pizza tasting prior to your party/wedding please contact us.
