Education/Experience

Our Chef/owner, Bruce Lyon, graduated from The Culinary Institute of America in Hyde Park, NY in 1984 following several years working in commercial kitchens.  He worked as a chef around the U.S. including the Summit Room at Harrah’s Tahoe, Sous Chef at The Christiania Restaurant in Sun Valley, ID, and teaching Hollywood’s elite to prepare healthful cuisine as head chef at The Cal-A-Vie Spa in Vista, CA.  Bruce perfected much of his production baking chops as head chef and baker with Steve Grover, original owner of
Steve’s Bagels in Ridgefield, CT.

Bruce’s backgrounds in facility design, and building were employed to create his mobile pizzeria and bring his hand crafted Neapolitan cuisine to any outdoor location.

 

Philosophy

His style of cuisine focuses on growing and sourcing the freshest organic seasonal produce possible and integrating the finest imported ingredients to achieve a unique synergy of healthful nutrition and vibrant flavors.


Victoria’s Wood Fired Pizza Catering is a full service mobile catering pizza truck.  As pizza truck caterers we feature authentic gourmet Neapolitan style pizza baked directly on the hearth next to the wood fire, right be fore your eyes.  Our pizza truck is ready to go to your awesome location. Our pizza and cuisine focuses on locally grown fresh produce and Italian imports. Please consider our pizza truck party packages. Pricing subject to change without notice. We cater pizza for private parties such as anniversaries, birthdays, weddings, welcome/rehearsal dinners, graduations and the holidays. We are located in Fairfield County, CT.  We cater in Connecticut & New York (including Westport, Greenwich, Stamford, Darien, Brookfield, Ridgefield, New Canaan, Washington,West Hartford, and Avon)
